I'm still going to go with Benny Goodman's Sing, Sing, Sing. Within two measures, I think even people who hate swing music can recognize the song.

For rock, how about the opening to Dire Straits' Money for Nothing?

Over the years, there have been several openings the stayed with me; but if a had to choose a few:

1. The first few notes of Cannonball Adderley's "Mercy, Mercy, Mercy," where you can immediately sense the smoke filled, after hours, darkened room filled with people ready to let the good times roll;

2. The plunking strings intro to Tracy Chapman's "Give Me One Reason;"

3. The bluesy piano lead-in to Erestine Anderson's "'Taint Nobody's Business If I Do" [ the whole record being a continuous, shared riff with Ray Brown on bass and Hank Jones piano.

'Money for nothin' is a good choice, as are most Knopfler efforts. How about both the 'Rides' - 'Slow' and 'Free'. I prefer Free Ride but they're both nice.

Speaking of Ludwig, how about 'Piano Sonata No. 14 in C-sharp Minor' (aka 'Moonlight Sonata')? Works on a number of different levels for me.

Moonlight Sonata...beautiful. That was the piece I played for my last piano recital.
